Veggie Packed Chickpea Bagels for Breakfast

Ingredients

  • 3/4c garbanzo bean flour
  • 1 flax egg (1T flax seeds + 3T water)
  • 1/2 medium carrot (grated)
  • 1T Nutritional Yeast
  • 1tsp baking powder
  • Water and a pinch of salt

Preparation

  1. Mix your flax egg and let it set in the fridge for 5-10min

  2. In a medium bowl, add your dry ingredients and grated carrot

  3. Once the flax egg is ready, add to dry mix with ~1/3-1/2c of water to create your dough

  4. Spray your donut tray (or coat with oil), add your mixture, and bake for 8-10min @ 375°

  5. Enjoy with your favorite toppings! I used @traderjoes cashew fiesta dip and 1 avocado for our bagels
