Chipotle Jackfruit Tostadas

Ingredients

  • 1 can young jackfruit (not ripe jackfruit)
  • 1/2 can chipotle peppers and adobo sauce, pureed or roughly chopped
  • 1/2 c finely chopped red onion
  • 1/2 tsp garlic powder
  • 1/2 tsp cumin
  • almond flour tortillas, warmed in skillet until crisp
  • guacamole
  • almond milk greek yogurt
  • black beans, warmed
  • cilantro
  • cherry tomatoes, halved
  • squeeze of lime

Preparation

  1. Preheat oven to 400

  2. Drain and rinse your jackfruit really well to remove brine. Pat dry and pull apart with fingers

  3. Combine chipotle peppers and adobo sauce, pulled jackfruit, seasonings, and red onion in a bowl. Mix well

  4. Spread on parchment lined baking sheets and roast for 15-20 minutes

  5. Assemble tostada by layering a @sietefoods tortilla with guac, black beans, greek yog, roasted jackfruit, tomatoes, cilantro, and a squeeze of lime
