Chipotle Lime Black Bean Burgers

Ingredients

  • 1 cup sweet potato, sliced into 1/4 inch coins
  • 1, 15 oz can black beans, rinsed and drained
  • 2 tbsp ground flax seeds
  • 4 tbsp water
  • 1 cup rolled oats
  • 2 chipotle peppers in adobo sauce
  • 1/2 cup pecans
  • 1/4 red onion, roughly chopped
  • Zest of 1 lime
  • Juice of 1 lime
  • 1 tbsp maple syrup
  • 2 tbsp soy sauce

Preparation

  1. Preheat oven to 400°F.

  2. On a lined baking sheet, place sweet potato rounds and bake for 10 minutes.

  3. Move the sweet potato to one side of the pan and add black beans, then bake for an additional 7-8 minutes.

  4. In a small bowl, combine flax seeds and water, mix well, and set aside to gel for about 5 minutes.

  5. In a food processor, add black beans, sweet potato, flax eggs, rolled oats, chipotle peppers, pecans, red onion, lime zest, lime juice, maple syrup, and soy sauce.

  6. Pulse the mixture, scraping down the sides as needed, until it starts to become moldable.

  7. Divide the mixture into 6 equal-sized burger patties.

  8. Cooking Option 1 (Skillet): Heat a little oil in a pan over medium heat. Cook both sides of the patties for about 4-5 minutes until browned.

  9. Cooking Option 2 (Oven): Place patties on a lined baking tray, spray both sides with a little oil, and bake at 375°F for 20 minutes. Flip and bake for an additional 10 minutes until firm.
