Choc Chip Cinnamon Swirl Cookie Dough Porridge

Ingredients

  • 1/4 cup quinoa flakes
  • 1 heaped tbsp flaxmeal
  • 1 heaped tbsp ground buckwheat
  • 1/2 ripe mashed banana
  • 1 tsp nut butter (walnut works well)
  • 2 tsp stevia
  • 1 tsp cacao nibs
  • 1/2 cup almond milk
  • 1/4 cup water (or 3/4 cup almond milk)

Preparation

  1. Combine all ingredients together in a pot.

  2. Keep stirring on medium heat until cooked through and gluggy, about 3-5 minutes.

  3. Swirl through 2 tsp cinnamon.

  4. Place porridge into a bowl.

  5. Stir through some extra cacao nibs.

  6. Sprinkle with any low FODMAP sweetener of choice, such as pure maple syrup, extra mashed banana, or rice malt syrup.

  7. Enjoy.
