Creamy Raw Spaghetti and No Meatballs

Ingredients

  • Noodles
  • 1 large zucchini (1 per person) ?Creamy sauce
  • 1 medium ripe avocado
  • 1 cucumber, peeled and sliced
  • A few large leaves of basil
  • 1 meyer lemon or regular lemon, juice of
  • 2 garlic cloves
  • 1/4 teaspoon white pepper or black pepper to taste ?“No Meatballs” (optional)
  • 1 cup raw walnuts soaked for about 4-6 hours in filtered water
  • 1/4 cup sweet red pepper finely diced
  • 1/4 cup grated carrot
  • 3 Tbsp sun dried tomatoes soaked for about an hour in filtered water
  • 2 tsp finely minced fresh garlic
  • 2 tsp finely chopped sweet onion
  • 1 tsp freshly squeezed lemon juice
  • 1/4 tsp of Celtic sea salt

Preparation

  1. Julienne or spiralize – zucchini (creates noodles or “zoodles”)

  2. Pulse “meatballs” in blender and form into balls (add more sundried tomato for more solid balls)

  3. Place all ingredients into a food processor/blender for “creamy sauce” and process until creamy. Add or subtract any ingredients you are not in favor of

  4. Toss zucchini pasta with avocado-cucumber puree and a handful of arugula
