Creamy Raw Spaghetti and No Meatballs
Ingredients
- Noodles
- 1 large zucchini (1 per person) ?Creamy sauce
- 1 medium ripe avocado
- 1 cucumber, peeled and sliced
- A few large leaves of basil
- 1 meyer lemon or regular lemon, juice of
- 2 garlic cloves
- 1/4 teaspoon white pepper or black pepper to taste ?“No Meatballs” (optional)
- 1 cup raw walnuts soaked for about 4-6 hours in filtered water
- 1/4 cup sweet red pepper finely diced
- 1/4 cup grated carrot
- 3 Tbsp sun dried tomatoes soaked for about an hour in filtered water
- 2 tsp finely minced fresh garlic
- 2 tsp finely chopped sweet onion
- 1 tsp freshly squeezed lemon juice
- 1/4 tsp of Celtic sea salt
Preparation
Julienne or spiralize – zucchini (creates noodles or “zoodles”)
Pulse “meatballs” in blender and form into balls (add more sundried tomato for more solid balls)
Place all ingredients into a food processor/blender for “creamy sauce” and process until creamy. Add or subtract any ingredients you are not in favor of
Toss zucchini pasta with avocado-cucumber puree and a handful of arugula
