Eggplant Raw Vegan Bacon Above

Ingredients

  • large purple eggplant (if not organic, then peel), sliced lengthwise into thin - 1/4 inch thick or less - slices
  • 2 tbsp tamari
  • 2 tbsp cold pressed oil of choice (almond, coconut, etc)
  • 2 tbsp apple cider vinegar
  • 1/2 tsp paprika
  • 1/4 tsp black pepper ?1 garlic clove crushed
  • 1 tsp mesquite powder

Preparation

  1. Add maple syrup if desired (1 or 2 tbsp)

  2. Mix all marinade ingredients together

  3. Place eggplant slices in marinade for at least an hour

  4. Place slices in a dehydrator and dehydrate at 115 degrees until completely dry – takes about 12 hours

  5. Want more of a crunch? Dehydrate for another hour

  6. No dehydrator? No problem - bake these at 350 for about 18 minutes or until golden, occasionally basting them with marinade
