Eggplant Raw Vegan Bacon Above
Ingredients
- large purple eggplant (if not organic, then peel), sliced lengthwise into thin - 1/4 inch thick or less - slices
- 2 tbsp tamari
- 2 tbsp cold pressed oil of choice (almond, coconut, etc)
- 2 tbsp apple cider vinegar
- 1/2 tsp paprika
- 1/4 tsp black pepper ?1 garlic clove crushed
- 1 tsp mesquite powder
How to steps
Add maple syrup if desired (1 or 2 tbsp)
Mix all marinade ingredients together
Place eggplant slices in marinade for at least an hour
Place slices in a dehydrator and dehydrate at 115 degrees until completely dry â takes about 12 hours
Want more of a crunch? Dehydrate for another hour
No dehydrator? No problem - bake these at 350 for about 18 minutes or until golden, occasionally basting them with marinade
