Fried Rice with Salt and Pepper Chips

Ingredients

  • Salt and pepper chips (serves 2/3)
  • 5 potatoes, chopped into wedges
  • 1 onion, chopped
  • 1 chilli, chopped
  • 1 tsp salt, pepper and Chinese five spice
  • 1 tbsp brown sugar
  • Soy sauce
  • Oil

Preparation

  1. Add the potato wedges to a pan and boil for ten minutes and then drain

  2. Mix the spices, sugar and salt and pepper together

  3. Add a splash of oil to a baking tray and pour the wedges into the tray. Sprinkle 2 tsp of the spice mixture over the wedges and then carefully toss the wedges until they are coated

  4. Put the wedges in the oven and cook for 20 minutes on 200 degrees

  5. In a wok/ large frying pan add the chilli and onion with a little oil and cook for 5 minutes

  6. Add the wedges, spice and a good chug of soy sauce to the pan and toss until they are coated. Fry for five minutes, turning the wedges regularly and then serve
