Ingredients

  • 1 cup pumpkin puree
  • 3 eggs
  • 1/2 cup maple syrup
  • 1/3 cup coconut oil, melted
  • 2 tsp pumpkin pie spice
  • 1/2 tsp. sea salt
  • 1/4 cup coconut flour
  • 1 1/2 cups almond flour
  • 1/2 tsp. baking soda
  • 1/2 cup pumpkin seeds plus more for sprinkling
  • pumpkin spice
  • 4 tsp ground cinnamon
  • 2 tsp ground ginger
  • 1 tsp ground cloves
  • 1/2 tsp ground nutmeg

Preparation

  1. Preheat the oven to 180C and prepare a muffin tin

  2. In a large bowl, combine the pumpkin puree, eggs, maple syrup, oil, pumpkin spice and salt and whisk to combine. Add the coconut flour and mix. Allow to rest for 10 minutes to absorb moisture. Add the almond flour and baking soda and stir again

  3. Distribute the batter between your cups. Sprinkle the pumpkin seeds on top. Bake for 20 minutes or until a toothpick comes out clean. Let them cool before removing them from the pan and enjoy
