Ginger Chia Pudding with Coconut and Peaches

Ingredients

  • 1/4 cup chia seeds
  • 1/2 tsp finely grated ginger
  • 3/4 cup coconut water
  • 6 tbs coconut milk
  • 2 tsp coconut sugar
  • 1/4 cup diced fresh peaches (plus more for topping)

Preparation

  1. Combine the chia seeds, ginger, coconut water, coconut milk and coconut sugar in a bowl or mason jar.

  2. Stir well.

  3. Let sit in the fridge overnight until thick.
