Ginger Chia Pudding with Coconut and Peaches
Ingredients
- 1/4 cup chia seeds
- 1/2 tsp finely grated ginger
- 3/4 cup coconut water
- 6 tbs coconut milk
- 2 tsp coconut sugar
- 1/4 cup diced fresh peaches (plus more for topping)
Preparation
Combine the chia seeds, ginger, coconut water, coconut milk and coconut sugar in a bowl or mason jar.
Stir well.
Let sit in the fridge overnight until thick.
