Gluten-Free Sweet Potato Pancakes

Ingredients

  • 1 cup sweet potatoes
  • 1.5 cups gluten-free oat flour
  • 4 egg whites
  • 3/4 cup homemade almond milk
  • 1 tablespoon vanilla extract
  • pinch of Himalayan salt

Optional

  • 2 squeezes agave nectar

Preparation

  1. Blend all ingredients in a NutriBullet or similar blender for best consistency.

  2. Cook the batter on a hot griddle or pan over medium heat until golden brown on both sides.
