Gluten-Free Sweet Potato Pancakes
Ingredients
- 1 cup sweet potatoes
- 1.5 cups gluten-free oat flour
- 4 egg whites
- 3/4 cup homemade almond milk
- 1 tablespoon vanilla extract
- pinch of Himalayan salt
Optional
- 2 squeezes agave nectar
Preparation
Blend all ingredients in a NutriBullet or similar blender for best consistency.
Cook the batter on a hot griddle or pan over medium heat until golden brown on both sides.
