Grain-Free Passover Oatmeal Alternative

Ingredients

  • 1 banana (mashed)
  • 1/2 cup riced cauliflower
  • 1 tablespoon ground flaxseeds
  • 2 tablespoons coconut flour
  • 2/3 cup almond milk
  • 3 tablespoons Lakanto PB powder
  • 1 serving liquid monk fruit sweetener drops

Toppings

  • blueberries
  • mini vegan Enjoy Life Foods chocolate chips
  • Trader Joe's raw creamy almond butter

Preparation

  1. Mash the banana in the bottom of the oatmeal pan.

  2. Add the rest of the ingredients except the protein powder and bring to a boil.

  3. Stir in the protein powder last on low heat.

Tips

  1. Optionally, add 1 tablespoon of chia seeds at the end without heat and cover to thicken.

  2. Be careful with the amount of liquid to avoid adding too much.
