Lemon Hemp Chia Pudding

Ingredients

  • 1 1/4 C plant milk (I used unsweetened almond)
  • 3/4 C plain greek yogurt (I used almond milk greek yogurt)
  • 1 small lemon, zested and juiced
  • 1/3 C chia seed
  • 1/3 C hemp seed
  • 1 TBSP unsweetened shredded coconut (optional)
  • 1 TBSP maple syrup
  • 1/2 tsp vanilla extract

Preparation

  1. Combine all ingredients in a bowl.

  2. Divide into 4 small mason jars or containers with lids for easy grab and go, or leave in one large bowl with lid.

  3. Eat plain or top with fruit and granola of choice.

Tips

  1. This pudding uses a combination of plant-based greek yogurt and plant-based milk for a creamy texture with a little tang.

  2. The added lemon, vanilla, and coconut give it a bright springy flavor.

  3. Chia and hemp seeds provide plant protein, omegas, and fiber.

  4. It is best made ahead of time, so prepare it for easy grab-and-go breakfasts all week long.
