Loaded White Bean Hummus Meal

Ingredients

  • 2 packages of white beans
  • 4 garlic cloves
  • Aquafaba (or use oil/water)
  • 2 tbsp tahini
  • 1 tsp lemon juice
  • Salt, pepper, cumin
  • Red onion
  • Cucumber
  • Tomatoes
  • Vegan Greek cheese (e.g., @violife_foods)
  • Roasted chickpeas
  • Tortillas (for dipping)

Preparation

  1. In a food processor, combine the white beans, garlic cloves, aquafaba (or oil/water), tahini, lemon juice, salt, pepper, and cumin. Blend until smooth and creamy.

  2. Transfer the hummus to a serving dish or a shallow bowl, spreading it evenly.

  3. Top the hummus with chopped red onion, sliced cucumber, diced tomatoes, crumbled vegan Greek cheese, and roasted chickpeas.

  4. Prepare your own tortillas by warming them up on a skillet or in the oven until they're soft and pliable.

  5. Serve the loaded white bean hummus with the tortillas for dipping.
