Raw Vegan Mac and Cheese

Ingredients

  • 1 cup cashew nuts (soaked for at least 2 hours and drained)
  • 1/4 cup water
  • 1/4 cup nutritional yeast
  • 1 red bell pepper, chopped
  • 1/2 tablespoon chili powder
  • 1 tablespoon tamari
  • 1 tablespoon fresh lemon juice
  • 1/4 teaspoon pink salt
  • 1/4 teaspoon garlic powder
  • 1/8 teaspoon cayenne pepper
  • 1/8 teaspoon turmeric powder
  • 1 clove garlic

Noodle

  • 2-4 medium zucchinis, ribboned or spiralized or grated

Optional additions

  • Green onions
  • Tomatoes
  • Cashew crumbs

Preparation

  1. Soak cashew nuts for at least 2 hours and drain.

  2. Prepare zucchini noodles by spiralizing, ribboning, or grating them.

  3. Blend all sauce ingredients until creamy.

  4. Place the noodles in a dish and sprinkle heavily with salt to draw out water.

  5. Rinse the noodles and press out excess fluid when ready to serve.

  6. Optionally, dehydrate the noodles for about 1 hour at 118 degrees Fahrenheit, then rinse and press out extra fluid again.

  7. Pour the sauce over the noodles and serve.
