• 1 cup cashew nuts (soaked for at least ??2 hours ahead – and drained)
  • 1/4 cup water
  • 1/4 cup nutritional yeast
  • 1 red bell pepper, chopped
  • 1/2 tbsp chili powder
  • 1 tbsp tamari
  • 1 tbsp fresh lemon juice
  • 1/4 tsp pink salt
  • 1/4 tsp garlic powder
  • 1/8 tsp cayenne pepper
  • 1/8 tsp turmeric powder
  • 1 clove garlic
  • optional: add green onions and tomatoes on the side – cashew crumbs on top!
  • noodles:
  • 2-4 medium zucchinis, ribboned or spiralized or grated (your choice!)

How to steps

  1. Blend all of the ingredients listed above (except for the zucchini)

  2. Blend until creamy

  3. Pour sauce over the noodles (see below)

  4. Noodles options:

  5. After making your noodles, place them in a dish and sprinkle heavily with salt

  6. This will help to draw out the water and make them softer

  7. Rinse noodles when ready to serve and press out the extra fluids

  8. To speed up the process you can also place the bowl in your dehydrator and warm for about 1 hour at 118 degrees

  9. Again, rinse and press out the extra fluid when ready to serve
