Mama's Mushroom Soup of the Day

Ingredients

  • 500g white closed cup mushrooms, sliced
  • 1 onion, diced
  • 1 carrot, diced
  • 2 stalks of celery, finely chopped
  • 3 garlic cloves, crushed
  • 400ml milk (unsweetened)
  • black pepper (I like a lot!!)
  • 500ml vegetable stock
  • 10 stalks of thyme leaves

Preparation

  1. Sauté the onion, celery, garlic and 350g of mushrooms in olive oil for 5 minutes

  2. Add the chopped carrot and thyme leaves and continue for 2-3 minutes

  3. Add the milk, vegetable stock and black pepper. Bring to a boil and simmer for 20 minutes

  4. Blend until smooth

  5. Sauté the remaining mushrooms with some salt and black pepper for 5-10 minutes and add to the blended soup (this step is optional)

Tips

  1. This step is optional but I like to have some chunky mushrooms in my soup

  2. I love the uniqueness of mushroom soup - it makes a really tasty change from most other veggie soups
