Green Packed Wraps with Pesto

Ingredients

  • spinach and herb wraps
  • lettuce
  • falafels
  • avocado
  • zucchini noodles
  • black beans
  • noodles
  • edamame
  • spinach-basil-kale pesto

Pesto components

  • 2 cups tightly packed spinach
  • 2 cups tightly packed basil
  • 1 cup chopped kale
  • 1 1/4 cups pine nuts
  • 4 tsp minced garlic
  • juice of 1 lemon
  • 1/4 cup nutritional yeast flakes
  • 1/4 cup water
  • 1/4 tsp salt

Preparation

Pesto

  1. Add the greens to a high-speed food processor and blitz until finely chopped.

  2. Add the rest of the ingredients and blend until well combined and the mixture resembles pesto. Occasionally stop to scrape down the sides of the food processor.

Assembly

  1. Prepare the spinach-basil-kale pesto using the provided instructions.

  2. Spread the pesto evenly on the spinach and herb wraps.

  3. Add fillings including lettuce, falafels, sliced avocado, zucchini noodles, black beans, edamame, and noodles.

  4. Roll up the wraps tightly and serve immediately.
