Mushroom Soup
Ingredients
- 1 onion, diced
- 1 carrot, diced
- 2 stalks of celery, finely chopped
- 3 garlic cloves, crushed
- 400ml milk (unsweetened)
- black pepper (i like a lot!!)
- 500ml vegetable stock
- 10 stalks of thyme leaves
- 500g white closed cup mushrooms
- sliced
Preparation
Sauté the onion, celery, garlic and 350g of mushrooms in olive oil for 5 minutes
Add the chopped carrot and thyme leaves and continue for 2-3 minutes
Add the milk, vegetable stock and black pepper
Bring to a boil and simmer for 20 minutes
Blend until smooth
Sauté the remaining mushrooms with some salt and black pepper for 5-10 minutes and add to the blended soup (this step is optional but i like to have some chunky mushrooms in my soup ?)
