Nutritious Baked Oats with Banana and Seeds
Ingredients
- 100g (1 cup) oats
- 2 small overripe bananas (200g)
- 200ml boiling water
- 1 tbsp pumpkin seeds
- 1 tbsp sunflower seeds
- 1 tbsp chopped walnuts
- Splash of lemon juice
- 1 tsp baking powder
- Yoghurt and granola to serve
Preparation
Preheat the oven to 200°C/400°F/gas mark 6.
Put boiling water and oats in a bowl and stir with a spoon to thicken slightly.
Leave for a couple of minutes.
Add all of the other ingredients into the bowl and stir with a spoon.
Pour the mixture into an 8-inch baking pan lined with baking parchment/paper.
Bake in the oven for around 30 minutes.
Slice and serve with a spoonful of coconut yoghurt and a sprinkle of granola.
