Nutritious Baked Oats with Banana and Seeds

Ingredients

  • 100g (1 cup) oats
  • 2 small overripe bananas (200g)
  • 200ml boiling water
  • 1 tbsp pumpkin seeds
  • 1 tbsp sunflower seeds
  • 1 tbsp chopped walnuts
  • Splash of lemon juice
  • 1 tsp baking powder
  • Yoghurt and granola to serve

Preparation

  1. Preheat the oven to 200°C/400°F/gas mark 6.

  2. Put boiling water and oats in a bowl and stir with a spoon to thicken slightly.

  3. Leave for a couple of minutes.

  4. Add all of the other ingredients into the bowl and stir with a spoon.

  5. Pour the mixture into an 8-inch baking pan lined with baking parchment/paper.

  6. Bake in the oven for around 30 minutes.

  7. Slice and serve with a spoonful of coconut yoghurt and a sprinkle of granola.
