Paleo Pumpkin Donuts with Cream Cheese Frosting
Ingredients
For the Donuts
- 2 eggs, whisked
- 1 cup almond flour
- 1/4 cup organic pumpkin
- 3 tbsp maple syrup
- 1 tsp baking powder
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 1/2 tsp pumpkin pie spice
For the Icing
- 1/2 tbsp coconut butter
- 1/2 tbsp maple syrup
- Milk of choice (optional, for thinning out the icing)
For the Cream Cheese Frosting
- 1/2 cup cream cheese
- 1 tbsp maple syrup
- Cinnamon
Preparation
Preheat the oven to 350F.
In a bowl, mix together the whisked eggs, almond flour, organic pumpkin, maple syrup, baking powder, vanilla extract, cinnamon, and pumpkin pie spice.
Pour the donut batter into a greased donut pan.
Bake the donuts in the preheated oven for 20-22 minutes.
Allow the donuts to cool before removing them from the pan.
For the Icing
While the donuts are baking, prepare the icing by mixing coconut butter and maple syrup together.
Microwave the mixture for 30 seconds and stir until well combined.
Let the icing sit for a minute and add a little milk of choice to thin it out, if needed.
Dip the slightly cooled donuts into the icing.
For the Cream Cheese Frosting
In a separate bowl, mix together the cream cheese, maple syrup, and cinnamon until smooth.
Once the donuts have cooled a bit, you can either dip them in the cream cheese frosting or spread the frosting on top.
