Quince Paste Cubes

Ingredients

  • base:
  • 2 large quinces
  • 1 cup of absolute organic cane sugar
  • 1/2 lime, juiced
  • coconut oil to grease
  • coating:
  • almond meal

Preparation

  1. Rinse, peel the quinces and remove its core

  2. Cut each quince into 6-8 pieces

  3. Boil about 1

  4. Litres of water in a large pot

  5. Add the lime juice and the quince pieces to the pot

  6. Simmer for about 30 minutes or until the pieces are very soft

  7. Drain the quince and let it cool down

  8. Using a cheesecloth, squeeze and drain the water out of the quinces, discarding its juice

  9. Puree the pieces with a potato masher until smooth

  10. Add the puree and the sugar in a pot and cook on medium heat for about 30 minutes, stirring all the time

  11. The paste is ready when its colour gets slightly darker and the mixture starts coming off the sides of the pot with a caramel-like texture

  12. Lightly grease a medium dish with coconut oil and pour the cooked paste in it

  13. Using a spatula, smooth out the paste evenly on the dish

  14. Let the paste rest overnight in the fridge

  15. Remove the paste from the dish and cut it into little cubes or slices as you prefer

  16. The coating is an optional nice finish

  17. For that, simply roll the cubes into a plate with almond meal

  18. Enjoy this delicious treat served with a cheese platter or just by itself
