Quince Paste Cubes
Ingredients
- base:
- 2 large quinces
- 1 cup of absolute organic cane sugar
- 1/2 lime, juiced
- coconut oil to grease
- coating:
- almond meal
Preparation
Rinse, peel the quinces and remove its core
Cut each quince into 6-8 pieces
Boil about 1
Litres of water in a large pot
Add the lime juice and the quince pieces to the pot
Simmer for about 30 minutes or until the pieces are very soft
Drain the quince and let it cool down
Using a cheesecloth, squeeze and drain the water out of the quinces, discarding its juice
Puree the pieces with a potato masher until smooth
Add the puree and the sugar in a pot and cook on medium heat for about 30 minutes, stirring all the time
The paste is ready when its colour gets slightly darker and the mixture starts coming off the sides of the pot with a caramel-like texture
Lightly grease a medium dish with coconut oil and pour the cooked paste in it
Using a spatula, smooth out the paste evenly on the dish
Let the paste rest overnight in the fridge
Remove the paste from the dish and cut it into little cubes or slices as you prefer
The coating is an optional nice finish
For that, simply roll the cubes into a plate with almond meal
Enjoy this delicious treat served with a cheese platter or just by itself
