Raw Vegan Coconut Macaroons with Chocolate Option

Ingredients

  • 2 cups raw unsweetened coconut flakes
  • 1/2 cup raw cacao powder (optional if you don't want chocolate macaroons)
  • 1/2 tsp vanilla extract
  • 1 tsp raw coconut sugar
  • 1/2 cup raw coconut nectar or maple syrup
  • pinch of sea salt

Preparation

  1. Mix together all ingredients except coconut nectar or maple syrup.

  2. Add the coconut nectar or maple syrup last and mix well until everything is well-combined.

  3. Scoop a small amount into hands and roll into shape. This step is a bit messy as the coconut nectar or maple syrup is sticky.

  4. Place macaroons into the freezer for a few hours.

  5. Sprinkle with some extra coconut flakes and serve cold.
