Raw Vegan Mac and Cheese
Ingredients
- 1 cup cashew nuts (soaked for at least 2 hours and drained)
- 1/4 cup water
- 1/4 cup nutritional yeast
- 1 red bell pepper, chopped
- 1/2 tablespoon chili powder
- 1 tablespoon tamari
- 1 tablespoon fresh lemon juice
- 1/4 teaspoon pink salt
- 1/4 teaspoon garlic powder
- 1/8 teaspoon cayenne pepper
- 1/8 teaspoon turmeric powder
- 1 clove garlic
Noodle
- 2-4 medium zucchinis, ribboned or spiralized or grated
Optional additions
- Green onions
- Tomatoes
- Cashew crumbs
Preparation
Soak cashew nuts for at least 2 hours and drain.
Prepare zucchini noodles by spiralizing, ribboning, or grating them.
Blend all sauce ingredients until creamy.
Place the noodles in a dish and sprinkle heavily with salt to draw out water.
Rinse the noodles and press out excess fluid when ready to serve.
Optionally, dehydrate the noodles for about 1 hour at 118 degrees Fahrenheit, then rinse and press out extra fluid again.
Pour the sauce over the noodles and serve.
