Raw Vegan Taco “Meat”


  • 1 cup walnuts (soaked overnight and drained)
  • 1/2 tbsp. cumin
  • 1 tsp. chili powder
  • pinch of cayenne
  • 1/2 tsp. (or more) garlic powder to taste
  • 1 tbs organic soy sauce - tamari (gluten free) or nama shoyu
  • 4 scallions (or chives) finely chopped


  1. Pulse the nuts in a food processor until chunky. ??Pour ground nuts into a mixing bowl. ??Add the spices and mix until thoroughly combined

  2. Pour in tamari or nama shoyu and scallions – mix together

  3. Add to your fiesta salad with some pico de gallo (tomatoes, onions, lemon juice chopped finely) with avocado on a bed of lettuce – and nutritious taco salad in your mouth!? You can even make tacos by using butter lettuce as taco shells
