Spinach and Beetroot Samosa Filling

Ingredients

  • 1 grated beet cup
  • 1 frozen spinach pack (approximately 2 cups)
  • 1 tablespoon sun dried tomatoes, chopped
  • 3 curry leaves
  • 2 tablespoons lemon juice
  • 1 tablespoon of pomegranate molasses
  • 1 tablespoon of oil
  • 1 tablespoon of chopped onion, cut into small pieces
  • 1 clove garlic, crushed
  • 1 teaspoon fresh turmeric ( or 1/2 teaspoon powdered)
  • 1 teaspoon cumin
  • salt and pepper as needed

Preparation

  1. Sauté garlic, onions, turmeric and curry leaves in oil

  2. Add the beets and cook for 3 minutes

  3. Add the spinach and stir

  4. Add the pomegranate molasses, lemon and all the spices, and mix until smooth and water evaporates

  5. Let the mixture cool (preferably a full day to enhance the flavor) and then stuff the samosa leaves
