Spinach and Beetroot Samosa Filling
Ingredients
- 1 grated beet cup
- 1 frozen spinach pack (approximately 2 cups)
- 1 tablespoon sun dried tomatoes, chopped
- 3 curry leaves
- 2 tablespoons lemon juice
- 1 tablespoon of pomegranate molasses
- 1 tablespoon of oil
- 1 tablespoon of chopped onion, cut into small pieces
- 1 clove garlic, crushed
- 1 teaspoon fresh turmeric ( or 1/2 teaspoon powdered)
- 1 teaspoon cumin
- salt and pepper as needed
Preparation
Sauté garlic, onions, turmeric and curry leaves in oil
Add the beets and cook for 3 minutes
Add the spinach and stir
Add the pomegranate molasses, lemon and all the spices, and mix until smooth and water evaporates
Let the mixture cool (preferably a full day to enhance the flavor) and then stuff the samosa leaves
