Sweet Potato Crème Brulée
Ingredients
- 150g roasted sweet potato / 2 cups soy milk / 4 tbsp maple syrup / 1/8 tsp cinnamon / 3 tbsp corn starch / 6 tbsp caster sugar

Preparation
In a blender, mix the sweet potato, milk, maple syrup, spice and corn starch together
Pour it in a saucepan
Whisk over a low heat until the mixture has thickened (around 5 minutes)
Carefully pour the mixture into your ramekins and place them into the fridge to set for at least 2 hours
Sprinkle caster sugar over & blow torch to caramelise (you can also use the grill mode at the highest temperature)
Serve and eat immediately
