Tofu Scramble

Ingredients

  • 1/2 block of extra firm tofu
  • 1 Tbsp @earthbalance butter
  • Yellow pepper, chopped
  • Baby portobello mushrooms, sliced
  • 1/4 tsp turmeric
  • 1/8 tsp smoked paprika
  • Sprinkle of chili pepper flakes
  • Sprinkle of garlic powder
  • 3 twists of fresh black pepper
  • Sprinkle of kosher salt

Preparation

  1. Melt butter in a pan.

  2. Add chopped yellow peppers and sliced portobello mushrooms, sauté until softened. Push them to the side of the pan.

  3. Crumble the tofu with your fingers and place it in the pan.

  4. Top the tofu with turmeric, smoked paprika, chili pepper flakes, garlic powder, black pepper, and salt.

  5. Stir the tofu, blending all the seasonings until it turns into a vibrant golden color.

  6. Mix the tofu with the sautéed yellow peppers and portobello mushrooms. Cook until the tofu reaches your desired tenderness.
