Vegan Buffalo Chickpea Cauliflower Bake

Ingredients

  • 1 can drained chickpeas
  • 8 oz precut cauliflower florets
  • 1 teaspoon oil
  • sprinkle of salt
  • 1 tablespoon vegan butter
  • 3 tablespoons hot sauce

Salad components

  • organic mixed greens
  • tomatoes
  • cucumbers
  • avocado
  • avocado ranch dressing

Preparation

  1. Preheat oven to 425 degrees.

  2. Toss 1 can drained chickpeas and 8 oz bag of precut cauliflower florets in 1 teaspoon oil and a sprinkle of salt, spread on a sheet pan and bake for 15 minutes, turning once halfway.

  3. Remove sheet pan and add 1 tablespoon vegan butter and 3 tablespoons hot sauce, disperse with a spatula to melt butter and coat with buffalo sauce, then broil for 5 minutes.

  4. Serve on a bed of salad or grains and drizzle with avocado ranch dressing.
