Vegan Cheesecake with Warm Berries
Ingredients
Cake base
- 60g cold vegan butter
- 40g sugar or coconut blossom sugar or xylitol
- 120g flour (wheat or spelt)
- 1 pinch of salt
Filling
- 800g soy skyr
- 50g semolina (wheat or spelt)
- 1 package vegan pudding powder (about 40g)
- 65g vegan butter
- sweetener of choice (e.g., vanilla or cheesecake flavor drops)
Topping
- 300g frozen berries
- 1/3 tsp agar agar
Preparation
Knead the ingredients for the base to a dough. If needed, add 1-2 tbsp water and place it in the fridge for about 20 minutes.
Mix all ingredients for the filling in a mixer or use a blender until creamy.
Preheat the oven to 180°C/350°F with upper and lower heat.
Roll out the dough into a circle and press it into a round baking form. Adjust the sides.
Use a fork to press little holes in the base.
Pour the filling inside and bake the cake for about 60 minutes until golden brown.
Let it cool down completely.
Heat up the berries and thicken them with agar agar or another thickener.
Spread the berry mixture on the cake and enjoy.
