Vegan Cheesecake with Warm Berries
Ingredients
Cake base
- 60g cold vegan butter
- 40g sugar/coconut blossom sugar/xylitol
- 120g flour (wheat or spelt)
- 1 pinch of salt
Filling
- 800g soy skyr
- 50g semolina (wheat or spelt)
- 1 package vegan pudding powder (~40g)
- 65g vegan butter
- sweetener of choice (e.g. vanilla/cheesecake flavored drops)
Topping
- 300g frozen berries
- 1/3 tsp agar agar
Preparation
Knead the ingredients for the base to a dough. If needed add 1-2 tbsp water and place it in the fridge for ~20min.
Mix all ingredients for the filling in a mixer or use a blender - it needs to be creamy.
Preheat the oven to 180°C/350°F upper and lower heat.
Roll out the dough into a circle and press it in a round baking form. Adjust the sides. Use a fork to press little holes in the ground.
Pour the cream inside and bake the cake for ~60 min until it's golden brown.
Let cool down completely, heat up the berries and thicken them with the agar agar or other thickener.
Spread it on the cake and enjoy!
