Vegan Cheesecake with Warm Berries

Ingredients

Cake base

  • 60g cold vegan butter
  • 40g sugar/coconut blossom sugar/xylitol
  • 120g flour (wheat or spelt)
  • 1 pinch of salt

Filling

  • 800g soy skyr
  • 50g semolina (wheat or spelt)
  • 1 package vegan pudding powder (~40g)
  • 65g vegan butter
  • sweetener of choice (e.g. vanilla/cheesecake flavored drops)

Topping

  • 300g frozen berries
  • 1/3 tsp agar agar

Preparation

  1. Knead the ingredients for the base to a dough. If needed add 1-2 tbsp water and place it in the fridge for ~20min.

  2. Mix all ingredients for the filling in a mixer or use a blender - it needs to be creamy.

  3. Preheat the oven to 180°C/350°F upper and lower heat.

  4. Roll out the dough into a circle and press it in a round baking form. Adjust the sides. Use a fork to press little holes in the ground.

  5. Pour the cream inside and bake the cake for ~60 min until it's golden brown.

  6. Let cool down completely, heat up the berries and thicken them with the agar agar or other thickener.

  7. Spread it on the cake and enjoy!
