Sugar Free Vegan Fudge with Crunchy Buckwheat Groats
Ingredients
- 1/3 cup coconut oil
- 2/3 cup sunflower seed butter
- 1 tablespoon plus 1 teaspoon cacao powder
- 1/4 teaspoon sea salt
- 1/2 teaspoon cinnamon
- Lucuma powder
- 1 teaspoon Maca powder
- 1-2 drops liquid stevia (optional)
- buckwheat groats (for topping)
- sunflower seeds (for topping)
Preparation
Melt 1/3 cup coconut oil.
Stir together melted coconut oil with 2/3 cup sunflower seed butter, 1 tablespoon plus 1 teaspoon cacao powder, 1/4 teaspoon sea salt, 1/2 teaspoon cinnamon, Lucuma powder, 1 teaspoon Maca powder and 1-2 drops liquid stevia (optional) until smooth.
In a glass dish (I used a 6x4 inch), line baking paper.
Pour the fudge mixture into the dish. Sprinkle with buckwheat groats or sunflower seeds on top.
Place the dish in the freezer for 30 minutes to firm up. Remove and cut into squares.
Enjoy and keep leftovers in the freezer.
For better digestibility on a low FODMAP diet, consider sprouting or activating buckwheat prior to use.
