Vegan Lemon Meringue Smoothie
Ingredients
- 1/2 cup coconut water
- 1 1/2 cups plant-based milk (I like something creamy like Macadamia, soy or hemp)
- 1/4 cup macadamias (soaked in filtered water) or 1 tbsp macadamia butter
- 1 banana
- 1 tsp vanilla (powder or extract)
- juice from 2 large lemons
Preparation
Blend all the ingredients in a high-speed blender until a thick, creamy consistency is reached.
Serve with some lemon zest over the top and a sprinkle of vanilla powder or cinnamon.
