Vegan Mushroom Gravy

Ingredients

  • 2 teaspoons olive oil
  • edium fry pan
  • cremini mushrooms (any mushrooms)
  • 1 tsp salt
  • 1 tsp dried thyme

Preparation

  1. Heat 2 teaspoons olive oil in a medium fry pan

  2. Add 10 oz chopped cremini mushrooms (any mushrooms), 1 tsp salt & 1 tsp dried thyme

  3. Sauté until all shroom liquid has been released & mostly evaporated

  4. Set aside

  5. Meanwhile, gently warm 2 cups non dairy milk (I used @oatly)

  6. Heat 3 tbs olive oil in a sauce pan. Add 1 large shallot (minced) and salt. Sauté until softened/translucent. Add 2-3 cloves minced garlic, sauté for 1 minute

  7. Whisk in 3 tbs flour. Cook for a few minutes, stirring consistently. Slowly whisk in warm milk. Add mushrooms. Turn up heat, bring to simmer. Reduce heat to low, simmer until thickened. Add black pepper & salt to taste
