Vegan Spinach and White Bean Soup
Ingredients
- 2 cups fresh spinach
- 1 can white beans
- 1 medium onion
- 2 cloves garlic
- 4 cups vegetable broth
- 1 tablespoon olive oil
- 1 teaspoon dried thyme
- 1/2 teaspoon paprika
- Salt and pepper to taste
Preparation
Heat olive oil in a large pot over medium heat
Add onion and garlic, sauté until softened and fragrant
Pour in vegetable broth, then add white beans, dried thyme, and paprika
Bring to a simmer and cook until flavors meld
Stir in fresh spinach and cook until wilted
Season with salt and pepper to taste
Serve hot
