Vegan Spinach and White Bean Soup

Ingredients

  • 2 cups fresh spinach
  • 1 can white beans
  • 1 medium onion
  • 2 cloves garlic
  • 4 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • 1/2 teaspoon paprika
  • Salt and pepper to taste

Preparation

  1. Heat olive oil in a large pot over medium heat

  2. Add onion and garlic, sauté until softened and fragrant

  3. Pour in vegetable broth, then add white beans, dried thyme, and paprika

  4. Bring to a simmer and cook until flavors meld

  5. Stir in fresh spinach and cook until wilted

  6. Season with salt and pepper to taste

  7. Serve hot
