Vibrant Loaded Superfood Salad
Ingredients
- Baby field greens
- Baby spinach
- Broccoli, steamed
- Purple carrots, steamed
- Asparagus, sautéed
- Red beet & cabbage kraut
- Cherry tomato variety
- Ramen (millet & brown rice)
- Tahini dressing
Preparation
Begin by washing and drying the baby field greens and baby spinach.
Steam the broccoli until tender and set aside.
Steam the purple carrots until they're cooked but still slightly crunchy. Set aside.
In a pan, sauté the asparagus until they're tender and slightly charred. Set aside.
In a large bowl, combine the steamed broccoli, purple carrots, and sautéed asparagus.
Add the red beet & cabbage kraut and cherry tomato variety to the bowl.
Cook the ramen according to the package instructions. Once cooked, drain and add to the salad bowl.
Prepare the tahini dressing by whisking together tahini with a touch of water, lemon juice, and any desired seasonings.
Drizzle the tahini dressing over the salad and toss everything together until well combined.
Serve the loaded superfood salad immediately and enjoy!
