Waffled Falafel

Ingredients

  • 1/2 cup chickpeas, soaked overnight
  • 1/2 cup chickpeas, soaked and cooked until tender
  • 1 onion, finely diced
  • 2-3 cloves of garlic, finely minced
  • 2 tablespoons parsley, chopped
  • 2 tablespoons coriander, chopped
  • 1/2 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1 tablespoon lemon juice.
  • 2 red chillies or 1/2 teaspoon chilli powder
  • 1/2 teaspoon freshly ground pepper

Preparation

  1. In a small bowl add Tahini, garlic, lemon juice, salt abd pepper and whisk until homogeneous

  2. In a Food processor add, both soaked and cooked chickpeas, sun dried tomatoes (excess water squeezed out) , cumin powder, coriander powder, red chillies, salt, lemon juice, pepper and process coarsely

  3. To this mixture add the chopped coriander, parsley, chopped onion and minced garlic and gently bring everything together

  4. Rest this mixture for half an hour so that chickpeas soak in all the favours

  5. Now heat the greased waffle iron and make a large ball from the chickpea mixture ,slightly bigger than a lemon and make the waffle

  6. In a small bowl add Tahini, garlic, lemon juice, salt abd pepper and whisk until homogeneous

  7. Serve with roast veggies, fresh salad and the tahini sauce
