Waffled Falafel with Herbs and Tahini Sauce
Ingredients
- 1/2 cup Chickpeas, Soaked overnight
- 1/2 cup Chickpeas, Soaked and cooked until tender
- 1 Onion, Finely diced
- 2-3 Cloves of garlic, finely minced
- 2 Tablespoons Parsley, Chopped
- 2 Tablespoons coriander, chopped
- 1/2 Teaspoon Cumin powder
- 1 Teaspoon Coriander powder
- 1 Tablespoon lemon juice
- 2 Red Chillies or 1/2 Teaspoon Chilli powder
- 1/2 Teaspoon Freshly ground pepper
- Sun dried tomatoes
Tahini sauce
- Tahini
- Garlic
- Lemon juice
- Salt
- Pepper
Preparation
In a small bowl, add tahini, garlic, lemon juice, salt and pepper, and whisk until homogeneous to make the tahini sauce.
In a food processor, add both soaked and cooked chickpeas, sun dried tomatoes with excess water squeezed out, cumin powder, coriander powder, red chillies, salt, lemon juice, pepper, and process coarsely.
Add chopped coriander, parsley, chopped onion, minced garlic to the mixture and gently mix everything together.
Rest the mixture for half an hour to allow flavors to meld.
Heat the greased waffle iron, form large balls slightly bigger than a lemon from the chickpea mixture, and cook in the waffle iron to make waffles.
Serve the waffled falafel with roast veggies, fresh salad, and the tahini sauce.
