Carrot Cake Cheesecake Slice
Ingredients
BASE
- 1/2 cup oats
- 1/2 cup walnuts or seeds (nut-free)
- 8 dates
- Pinch of pink sea salt
- 1 to 2 Tbsp warm water
CARROT FILLING
- 2 big carrots, chopped and steamed
- 4 dates or 1/4 cup maple syrup
- 1/2 cup cacao butter, melted
- 1/4 cup tahini
- 2 Tbsp coconut butter
- 1/2 tsp cinnamon
- Pinch of nutmeg
- 2 Tbsp hot water
Preparation
Start by processing the BASE ingredients. Process until a dough forms and easily holds together when pressed in your hands. Add a bit more liquid if needed.
Press the mixture into the bottom of a pan lined with parchment paper.
For the CARROT FILLING, blend all the filling ingredients until very creamy and smooth.
Pour the carrot filling mixture on top of the prepared base in the pan.
Leave the pan in the freezer for about one hour to set.
Once set, transfer the pan to the refrigerator until ready to serve.
Optionally, you can top the slices with shredded coconut and walnut pieces before serving.
