Coconut Palm Sugar Agar-Agar Jelly

Ingredients

  • 1 cup palm sugar
  • Pandan leaves
  • 1 cup water
  • 4 tablespoons sugar
  • 1 cup thick coconut milk
  • 1 egg
  • Vanilla essence (optional)
  • 1 packet agar-agar (37.5g)
  • Water as needed
  • 3 tablespoons additional sugar

Preparation

  1. Mix 1 cup palm sugar with pandan leaves, 1 cup water, and 4 tablespoons sugar until the sugar dissolves, then strain and set aside

  2. Break the egg into a bowl, add 1 cup thick coconut milk, beat until smooth, add a little vanilla essence or blend if desired, and set aside

  3. Cut the agar-agar if necessary, place it in a pot, add water just to cover, and add 3 tablespoons sugar

  4. Stir the agar-agar mixture until it dissolves and boils, then strain it into the palm sugar mixture prepared earlier

  5. Return the combined mixture to the pot and heat until it is about to boil

  6. Add the egg and coconut milk mixture, stir well until combined

  7. Wait until the mixture boils, then turn off the heat

  8. Grease the mold before pouring

  9. Pour the mixture into the mold

  10. Let it cool slightly

  11. Refrigerate until set and ready to serve
