Fluffy Vegan Chocolate Coffee Hazelnut Birthday Cake

Ingredients

  • 1/2 cup rice flour
  • 1/2 cup tiger nut flour
  • 1/2 cup ground almonds
  • 1/2 cup raw cacao powder
  • 2 tsp aluminium-free baking powder
  • 1 tsp aluminium-free bicarbonate of soda
  • 1 tsp Himalayan salt
  • 1/2 cup freshly made thick and creamy macadamia milk
  • 1/2 cup strong coffee (made with 2 heaped Tbs of hazelnut roasted coffee, including grounds)
  • 1 Tbs fresh dry coffee grounds
  • 1/3 cup flax seeds ground
  • 1/3 cup unrefined rapeseed oil
  • 1 Tbs apple cider vinegar
  • 3 tsp vanilla extract
  • 1/2 cup erythritol
  • 1/2 cup coconut sugar

Preparation

  1. Blend all ingredients together.

  2. Preheat the oven to 180 degrees C.

  3. Line a round cake mold with parchment paper, grease with coconut oil, and sprinkle with ground almonds.

  4. Pour the blended mixture into the mold.

  5. Bake in the preheated oven for about 40 minutes.

  6. Once baked, let the cake cool.
