Healthy Vegan Blueberry Pancakes with Oats

Ingredients

  • 1 cup oats
  • 1 cup almond milk
  • 1/2 ripe banana
  • 1 tbs chia seeds
  • 1 tsp baking powder
  • splash of vanilla extract
  • 1/2 cup blueberries

Preparation

  1. Blend all the ingredients together except the blueberries.

  2. Transfer the batter from your blender to a bowl and let it sit for a few minutes to allow the baking powder to work and make the pancakes fluffy.

  3. Add in your blueberries and give the mixture a stir.

  4. Heat up a skillet on medium high heat and pour your pancake batter onto the skillet.

  5. Cook for 2 minutes on one side then flip and cook for another minute.

  6. Now pile on your toppings such as banana slices, frozen blueberries, peanut butter, granola, hemp seeds, and bee pollen.
