Healthy Vegan Blueberry Pancakes with Oats
Ingredients
- 1 cup oats
- 1 cup almond milk
- 1/2 ripe banana
- 1 tbs chia seeds
- 1 tsp baking powder
- splash of vanilla extract
- 1/2 cup blueberries
Preparation
Blend all the ingredients together except the blueberries.
Transfer the batter from your blender to a bowl and let it sit for a few minutes to allow the baking powder to work and make the pancakes fluffy.
Add in your blueberries and give the mixture a stir.
Heat up a skillet on medium high heat and pour your pancake batter onto the skillet.
Cook for 2 minutes on one side then flip and cook for another minute.
Now pile on your toppings such as banana slices, frozen blueberries, peanut butter, granola, hemp seeds, and bee pollen.
