Homemade Vegan Maultaschen (Swabian Filled Pasta Squares)
Ingredients
For the dough
- 250g hard wheat semolina
- 100-150ml water
- 2 tbsp oil
For the filling
- 180g plant-based minced meat
- 2 tbsp breadcrumbs
- 1 onion
- 1.5 spring onions
- 1/2 tbsp sambal Olek
- 2 tbsp soy sauce
- 1 handful parsley
- 1 handful chives
- Salt and pepper
Also
- 1 liter veggie broth
Preparation
In a bowl, add semolina.
Gradually add oil and water on top, little by little.
Knead for at least 10 minutes until smooth, adding more water if needed.
Place the dough in clingfilm and let it sit for 30 minutes.
Chop the onion and spring onion, then fry in oil.
Add the plant-based minced meat.
Season with sambal olek, salt, and pepper.
Deglaze with soy sauce.
Remove from the stove and let it cool down slightly.
Chop the herbs.
In a bowl, mix the plant-based minced meat, herbs, and breadcrumbs.
Roll out the dough on a floured surface.
Cut out squares and add about a tablespoon of filling in each square.
Place another square on top and seal with a fork.
Cook the pasta squares in the veggie broth and serve them with the broth as a soup, garnished with chopped chives on top.
