Macadamia Raspberry Vegan Fudge Bliss

Ingredients

  • 1 1/2 cups Macadamia Nuts (@theactivatednutcompany)
  • 1/2 cup Dried Raspberries
  • 200g Vegan Chocolate (85%)
  • 1/2 cup Coconut Milk
  • 1/2 cup Nut Butter of Choice
  • 1/4 cup Pure Maple Syrup
  • 2 tsp Pure Vanilla Extract

Preparation

  1. Chop the vegan chocolate into very small pieces and place them in a large heatproof bowl. Set aside.

  2. In a saucepan, heat the coconut milk and rice malt syrup until it's just simmering. Immediately pour this mixture over the chocolate. Let it stand for 2 minutes.

  3. After 2 minutes, whisk the mixture until it becomes silky smooth. Add the nut butter and vanilla extract, and whisk until well incorporated.

  4. Fold in the chopped macadamia nuts and dried raspberries into the chocolate mixture.

  5. Pour the mixture into a lined tray and spread it evenly.

  6. Transfer the tray to the fridge to allow the fudge to set.

  7. Once set, cut the fudge into desired shapes and sizes.

  8. Store the fudge in an airtight container in the fridge.
