Mandy Chicken Rice Dish

Ingredients

Broth components

  • Half a chicken
  • 1 chicken stock cube
  • 1/2 teaspoon cumin
  • 1/2 teaspoon coriander
  • 1/2 teaspoon black peppercorns
  • 1 large onion, quartered
  • 1 green or red chili, halved
  • 1 tomato, quartered
  • 1 teaspoon salt

Rice components

  • 3 cups basmati rice
  • 1 tablespoon margarine
  • Curry leaves (optional)
  • 1/2 teaspoon cumin
  • 1/2 teaspoon coriander seeds
  • 1 cinnamon stick

Acar components

  • 4 tomatoes, diced
  • 1 cucumber, diced
  • Cabbage, thinly sliced
  • 1 carrot, thinly sliced
  • Lemon juice, to taste
  • Salt, to taste
  • Sugar, to taste

Sambal components

  • 2 medium tomatoes
  • 2 large chilies
  • 10 bird's eye chilies
  • Salt, to taste
  • Sugar, to taste
  • Tamarind juice or lemon juice, to taste
  • 1 large onion, thinly sliced
  • 1 tomato, sliced

Chicken finishing components

  • Turmeric powder, to coat
  • Sweet soy sauce, to coat

Preparation

  1. Soak basmati rice in water for 30 minutes.

  2. Boil half a chicken with broth components for 30 minutes.

  3. In a pan, heat margarine and fry optional curry leaves, cumin, coriander seeds, and cinnamon stick.

  4. Add soaked rice to the pan, stir for 1 minute, then transfer to a rice cooker.

  5. Add chicken broth to the appropriate level, include chicken bones and remaining broth ingredients except the chicken meat, top with coriander leaves or parsley, and cook rice as usual.

  6. Once rice is cooked, add a few drops of red and yellow food coloring and fluff with a fork.

  7. For acar, mix diced tomatoes, diced cucumber, thinly sliced cabbage, and thinly sliced carrot with lemon juice, salt, and sugar to taste.

  8. For sambal, blend tomatoes, large chilies, and bird's eye chilies with salt, sugar, and tamarind juice or lemon juice, then mix with thinly sliced onion and sliced tomato.

  9. Remove chicken from broth, coat with turmeric powder and sweet soy sauce, and grill briefly until slightly charred.

  10. Use the remaining broth as soup to serve with the rice.

Tips

  1. Adjust seasoning in acar and sambal to personal taste for desired flavor balance.

  2. The curry leaves in rice are optional and can be omitted if preferred.
