Ricotta and Kale Cheesy Wraps

Ingredients

  • 100 grams firm ricotta (or dairy-free cream cheese for a vegan option)
  • 2 cups steamed kale
  • 1 garlic clove
  • 1 tablespoon lemon juice
  • 1 tablespoon avocado oil
  • 1/2 cup shredded cheese (or dairy-free cheese for a vegan option)
  • 3 whole-meal wraps

Preparation

  1. In a food processor, combine the ricotta/cream cheese, steamed kale, garlic, lemon juice, and avocado oil. Pulse until creamy and smooth.

  2. Spread about 2 tablespoons of the mixture onto each wrap.

  3. Sprinkle shredded cheese on top of the mixture.

  4. Roll up the wraps tightly.

  5. Place the wraps on a grill and cook for a couple of minutes until they become crispy and brown on the outside.

  6. Slice the wraps, serve, and enjoy!
