Super Simple Vegan Zucchini Pie

Ingredients

Shortcrust Pastry

  • 100g wholemeal flour
  • 120g flour
  • 1 large pinch of salt
  • 70g olive oil
  • 60-70g water

Filling

  • 1 zucchini (about 300g)
  • 20cL soy cream
  • 30g chickpea flour
  • Salt and pepper
  • 1 pinch of dried herbs

Preparation

  1. Preheat the oven to 180°C (350°F).

  2. In a bowl, mix the wholemeal flour, flour, and salt. Add the olive oil and mix until the flour is coated. Gradually add the water while continuing to mix until a dough ball can be formed.

  3. Roll out the dough and line a pie dish with it. Bake the crust in the preheated oven for 5 minutes.

  4. Cut the zucchini into thin slices.

  5. In a bowl, mix the soy cream, chickpea flour, and add the zucchini slices. Season with salt, pepper, and dried herbs.

  6. Fill the pre-baked pie crust with the zucchini mixture.

  7. Bake in the oven for 25 to 30 minutes, or until the pie is cooked through and golden.

  8. Serve and enjoy!
