Super Simple Vegan Zucchini Pie
Ingredients
Shortcrust Pastry
- 100g wholemeal flour
- 120g flour
- 1 large pinch of salt
- 70g olive oil
- 60-70g water
Filling
- 1 zucchini (about 300g)
- 20cL soy cream
- 30g chickpea flour
- Salt and pepper
- 1 pinch of dried herbs
Preparation
Preheat the oven to 180°C (350°F).
In a bowl, mix the wholemeal flour, flour, and salt. Add the olive oil and mix until the flour is coated. Gradually add the water while continuing to mix until a dough ball can be formed.
Roll out the dough and line a pie dish with it. Bake the crust in the preheated oven for 5 minutes.
Cut the zucchini into thin slices.
In a bowl, mix the soy cream, chickpea flour, and add the zucchini slices. Season with salt, pepper, and dried herbs.
Fill the pre-baked pie crust with the zucchini mixture.
Bake in the oven for 25 to 30 minutes, or until the pie is cooked through and golden.
