Vegan Poppy Seed Kutia - a Healthier Christmas Dessert

Ingredients

  • 1 1/2 cups crushed poppy seeds
  • 300 ml plant-based milk
  • 250 ml water
  • 1 1/2 cups quinoa
  • 1/2 cup agave juice or honey
  • 1 1/2 cups raisins
  • 1 Tbsp candied lime zest
  • 2 tbsp dried sugared cranberries
  • 1 cup almonds (flakes or crushed)
  • 1/2 cup walnuts
  • Zest of 1 small lemon
  • Zest of 1 small orange

Preparation

  1. In a saucepan, combine crushed poppy seeds, plant-based milk, and water. Stir and bring to a boil over medium heat.

  2. Reduce the heat and simmer for 20-25 minutes, stirring frequently. Once boiled, cover and leave to soak in the fridge for 1-2 hours.

  3. After soaking, stir the poppy seeds to ensure proper mixing.

  4. Cook quinoa according to package instructions. Once cooked, add raisins and dried sugared cranberries. Mix well and set aside.

  5. Chop the almonds and walnuts.

  6. Combine the chopped nuts, cooked quinoa with raisins and cranberries, and all the remaining ingredients with the soaked poppy seeds. Stir to combine thoroughly.

  7. Decorate with some almond flakes and serve as a pre-Christmas Eve dinner or a festive dessert.
