Blueberry Coconut Bliss Balls

Ingredients

  • 1 cup gluten-free rolled oats
  • 1 cup frozen wild blueberries
  • 2 tsp pure organic maple syrup
  • 1 tbsp organic almond butter (or cashew butter)
  • 1/2 tsp pure organic vanilla extract
  • 1/3 cup shredded organic unsweetened coconut & more for rolling

Preparation

  1. Add all the ingredients to your blender & blend until fully combined. If the mixture is a bit dry, add a touch more maple syrup and/or filtered water. If the mix is too wet or sticky, refrigerate it for about 10 minutes.

  2. Add some shredded coconut to a bowl for rolling.

  3. Roll the mixture into 10-12 balls.

  4. Refrigerate or freeze to allow them to firm up.

  5. Enjoy!
