Blueberry Lemon Oatmeal with Maple Syrup

Ingredients

  • half a cup of steel cut oats
  • half a cup of whole grain oats
  • 2 cups of water
  • juice of 1 lemon
  • 1/4 teaspoon vanilla bean powder
  • 3/4 cup frozen wild blueberries
  • maple syrup

Preparation

  1. Cook half a cup of steel cut oats and half a cup of whole grain oats with 2 cups of water as directed.

  2. While oats are still cooking, squeeze in the juice of 1 lemon and add 1/4 teaspoon of vanilla bean powder.

  3. Once the oats are done but still hot, mix in 3/4 cup of frozen wild blueberries until the oatmeal is purple and the berries are evenly dispersed.

  4. Add maple syrup to your liking. This can serve one very hungry person or two normal people.
