Creamy Raspberry & Coconut Porridge

Ingredients

  • 60g (2/3 cup) oats (gf if required. I used rolled/porridge oats)
  • 150ml coconut milk
  • 150ml water
  • Handful of raspberries
  • 1 tbsp sweetener or sugar (Optional. I used stevia)
  • 1 tbsp coconut chips or desiccated coconut

Preparation

  1. Put the oats, water, and milk into a deep bowl and microwave on high for 2 minutes.

  2. Leave to rest for 5 minutes then stir. Add a splash of milk if it’s too thick - this will make it extra creamy too.

  3. Microwave again on high for 2 minutes.

  4. Scatter over berries and coconut.

  5. Enjoy.
