Creamy Raspberry & Coconut Porridge
Ingredients
- 60g (2/3 cup) oats (gf if required. I used rolled/porridge oats)
- 150ml coconut milk
- 150ml water
- Handful of raspberries
- 1 tbsp sweetener or sugar (Optional. I used stevia)
- 1 tbsp coconut chips or desiccated coconut
Preparation
Put the oats, water, and milk into a deep bowl and microwave on high for 2 minutes.
Leave to rest for 5 minutes then stir. Add a splash of milk if it’s too thick - this will make it extra creamy too.
Microwave again on high for 2 minutes.
Scatter over berries and coconut.
Enjoy.
