Flavorful Spinach and Soy Curl Wrap
Ingredients
- 1 cup dry soy curls
- 1/2 cup white vinegar
- 2 cups hot water
- 1/2 vegetable bouillon cube or 1 tsp vegetable bouillon base
- 1 tsp cornstarch
- 2 tsp sazon
- 1/2 tsp garlic powder
- 1/4 tsp onion powder
- 1/2 tsp paprika
- 1/2 tsp ground cumin
- 1/2 tsp ground coriander
- 2 tsp soy sauce
- Salt and pepper to taste
- Juice of 1/2 lime
- Spinach leaves
- Onions
- Peppers
- Pico de Gallo
- Tortilla wraps
Preparation
In a bowl, place the dry soy curls and pour hot water, white vinegar, and vegetable bouillon over them. Let them soak for 5-10 minutes.
Drain the liquid from the soy curls using a mesh strainer and gently squeeze out excess liquid from the soy curls.
In a bowl, combine the soy curls with cornstarch, sazon, garlic powder, onion powder, paprika, ground cumin, and ground coriander. Toss to coat the soy curls with the seasoning mixture.
Heat a skillet with a teaspoon of oil and add the seasoned soy curls. Pour in the soy sauce and sauté the soy curls until they release moisture, firm up, and lightly brown, which should take about 5-10 minutes.
Towards the end of cooking, squeeze lime juice over the soy curls and mix well.
Assemble the wraps by laying out a tortilla wrap and placing spinach leaves, sautéed soy curls, onions, peppers, and pico de Gallo on top.
Roll up the tortilla to create the wrap.
