Gingerbread Pancakes with Chia-Coconut Filling

Ingredients

  • 1 cup wholemeal flour
  • 1 cup oat & hemp milk
  • 1 tbsp apple cider vinegar
  • 1 tsp baking powder
  • 1 banana
  • 1 tbsp chia seeds
  • 1 tsp ginger
  • Pinch of nutmeg
  • 1/2 tsp cinnamon

Preparation

  1. Put all the ingredients into a blender & blend to a smooth batter. Let the batter rest for 5 minutes so the seeds thicken the mix slightly.

  2. Heat a little oil in a frying pan & pour in the batter. Cook on medium heat for 1 minute until the surface starts to bubble. Flip & cook the other side.
