Gingerbread Pancakes with Chia-Coconut Filling
Ingredients
- 1 cup wholemeal flour
- 1 cup oat & hemp milk
- 1 tbsp apple cider vinegar
- 1 tsp baking powder
- 1 banana
- 1 tbsp chia seeds
- 1 tsp ginger
- Pinch of nutmeg
- 1/2 tsp cinnamon
Preparation
Put all the ingredients into a blender & blend to a smooth batter. Let the batter rest for 5 minutes so the seeds thicken the mix slightly.
Heat a little oil in a frying pan & pour in the batter. Cook on medium heat for 1 minute until the surface starts to bubble. Flip & cook the other side.
